At Di Micheli, a family trattoria settled on Place des Cardeurs in Aix-en-Provence since September 2021, we have built a tight menu around these classics: Neapolitan pizza, fresh pasta, antipasti and homemade desserts such as tiramisu. Rather than offering everything, we chose to do the essentials well, with fresh produce and no frozen pasta.

If we had to keep only one specialty, it would be Neapolitan pizza. Our dough ferments for 48 hours at 70% hydration before spending a few seconds in the wood-fired oven heated to 450°. It is this combination that gives a pizza that is light, supple and easy to digest, with the puffed crust typical of Naples. From the margherita to the burrata version, pizza remains the heart of our menu and the first specialty we recommend to anyone discovering Italian cuisine.
Beyond pizza, fresh pasta is one of the must-haves we prepare in-house. Made on site, it has nothing to do with industrial pasta: the texture, the bite and the taste change completely. We pair it with antipasti to open the meal in pure Italian tradition, with produce chosen for its freshness. These two families of dishes complete the pizza and make it possible to put together a true Italian meal, from starter to main course.
