The must-try
Italian specialties

Wood-fired Neapolitan pizza, homemade fresh pasta, antipasti and tiramisu: discover Di Micheli's must-try Italian specialties, our family trattoria on Place des Cardeurs in Aix-en-Provence.

A word from the trattoria

What are the must-try Italian specialties?

When we talk about must-try Italian specialties, we first think of a handful of dishes that sum up the Italian table on their own. At Di Micheli, a family trattoria settled on Place des Cardeurs in Aix-en-Provence since September 2021, we have built a tight menu around these classics: Neapolitan pizza, fresh pasta, antipasti and homemade desserts such as tiramisu. Rather than offering everything, we chose to do the essentials well, with fresh produce and no frozen pasta.

This page brings together our most requested specialties and explains why they deserve their place among the must-haves. Each dish mentioned links to a dedicated page on the site, so you can explore the subject that interests you, then come and discover it in the dining room or on the terrace, a stone's throw from the historic centre of Aix-en-Provence.

Neapolitan pizza, the number-one specialty

If we had to keep only one specialty, it would be Neapolitan pizza. Our dough ferments for 48 hours at 70% hydration before spending a few seconds in the wood-fired oven heated to 450°. It is this combination that gives a pizza that is light, supple and easy to digest, with the puffed crust typical of Naples. From the margherita to the burrata version, pizza remains the heart of our menu and the first specialty we recommend to anyone discovering Italian cuisine.

Fresh pasta and antipasti, the homemade classics

Beyond pizza, fresh pasta is one of the must-haves we prepare in-house. Made on site, it has nothing to do with industrial pasta: the texture, the bite and the taste change completely. We pair it with antipasti to open the meal in pure Italian tradition, with produce chosen for its freshness. These two families of dishes complete the pizza and make it possible to put together a true Italian meal, from starter to main course.

Tiramisu and Italian desserts to finish the meal

No Italian table would be complete without its desserts, and tiramisu is among our favourite specialties. Made in-house, it closes the meal on a sweet and indulgent note, alongside our other Italian desserts. This homemade approach guides our whole menu: we deliberately work with a tight selection to guarantee freshness and the care given to each plate rather than multiplying options.

Italian cuisine is a living heritage, rich in regional specialties. To explore its full extent, browse Italian cuisine on Wikipedia, then come and rediscover our must-haves on our plates.

Discovering our must-try Italian specialties also means enjoying a place designed for every occasion. With a private room seating 24 and a 20-seat terrace, Di Micheli welcomes a quick lunch as well as a family meal, a birthday or a corporate dinner, with tailor-made menus. All in the heart of Aix-en-Provence, on Place des Cardeurs, in a family trattoria run by a team of five passionate people.
