Di Micheli's Italian cuisine draws on the Neapolitan tradition while staying resolutely contemporary. Since September 2021, our family trattoria has gathered a team of five around one idea: serving honest Italian food, a stone's throw from the historic centre of Aix-en-Provence. It all starts with the dough, kneaded and then left to ferment for 48 hours at 70% hydration, before going into the wood-fired oven heated to 450°.
Beyond pizza, our Italian menu gives pride of place to fresh pasta, antipasti and homemade desserts. We deliberately keep a tight menu: fewer dishes, but fresh produce, careful cooking and zero frozen pasta. This is what sets genuine Italian cuisine apart from simple fast food.
