Neapolitan
pizza in Aix-en-Provence

Dough fermented for 24 hours, a few seconds in the wood-fired oven at 480°, fresh produce and nothing frozen. At Di Micheli, on Place des Cardeurs, pizza is made the Naples way — right in the heart of pedestrian Aix.

The Neapolitan craft

Three things that make the pizza

A good Neapolitan pizza is not about a secret, but about three gestures watched at every service. Here is what we check before it goes in the oven.

The dough

24 hours of fermentation at 70% hydration. It carries everything else — lighter, more digestible, with aromas of fresh bread.

The wood-fired oven

A few seconds at 480° is enough: the cornicione puffs up, catches the flames, and the topping stays fresh without ever drying out.

The produce

A short menu, fresh produce, nothing frozen. From tomato to basil, every ingredient is chosen to withstand the lightning bake.

The bake

A pizza straight from the wood-fired oven

Here the pizza never sees an electric oven: it bakes under a wood-fired vault heated to 480°. At that temperature the pizza is ready in a handful of seconds, just long enough for the dough to rise and the mozzarella to melt without releasing its water.

It is this fierce, fast bake that gives the Neapolitan its airy rim, its golden blisters and the lightness that sets it apart from a standard pizza. The gesture is repeated dozens of times a service, always to the same standard.

Pizza is best enjoyed here, scorching hot

Inside or on our 90-seat terrace, the pizza leaves the oven and reaches the table within moments. That is where — right in the pedestrian heart of Aix — a Neapolitan gives its very best.

Our trattoria

Far more than a pizzeria in Aix

Di Micheli is a family trattoria opened in September 2021. Neapolitan pizza takes the lead, but it never comes alone: antipasti to share, fresh pasta and homemade desserts extend the meal in the same spirit.

Our team welcomes you at lunch and dinner, Monday to Sunday, inside or on the terrace. Book in seconds, or take your pizza away to enjoy anywhere in Aix.

The location is ideal: Place des Cardeurs, in the historic pedestrian heart of Aix-en-Provence, a stone's throw from La Rotonde and Cours Mirabeau.

Pizza in detail

Where to eat a good pizza in Aix-en-Provence

Finding a real Neapolitan pizza in Aix-en-Provence is not just about finding a pizzeria: it is about finding a dough worked with time. At Di Micheli, on Place des Cardeurs, our dough ferments for 24 hours at 70% hydration before spending a few seconds under a wood-fired vault heated to 480°. This long fermentation makes the pizza lighter and more digestible, and gives that puffed, airy, flame-kissed cornicione you recognise at the first bite.

From the plainest margherita to richer pizzas with burrata or cured meats, everything rests on the same base: a short menu, fresh produce and no frozen dough. The fast, very high-heat bake keeps the tomato fresh, melts the mozzarella without drying it out and perfumes the whole without ever burning the basil.

Our family trattoria welcomes you at lunch and dinner, Monday to Sunday, in the pedestrian heart of Aix. As a couple, a family or a group, you can pair your pizza with antipasti to share, fresh pasta or a homemade dessert, inside or on our 90-seat terrace.

Neapolitan pizza is inscribed on UNESCO's intangible heritage list; to discover its history, browse the Neapolitan pizza page on Wikipedia, then come and taste our own version, on Place des Cardeurs.

It all starts with the Neapolitan pizza, its 24-hour fermented dough and its wood-fired bake. On the topping side, discover the margherita or the burrata pizza, then extend the meal with our fresh pasta and antipasti.
