It brings together two things we care deeply about: a carefully crafted Neapolitan dough and a fresh cheese with an unmistakable texture. Our dough ferments for 48 hours at 70% hydration before spending a few seconds in the wood-fired oven heated to 450°. It's this light, easy-to-digest base that then welcomes the burrata, for a balance between the softness of the dough and the creaminess of the cheese.

At Di Micheli, the burrata is served fresh: we add it once the pizza comes out of the oven rather than baking it, to keep its creamy heart and gentle flavour. That single gesture changes everything, and it makes this pizza one of the favourites among Italian cuisine lovers in Aix-en-Provence. As with the rest of our tight menu, we work with fresh produce, no frozen pasta, and everything is made in-house by our team of five.
